卒業生との産学連携プロジェクトから
新しいコンセプトの日本酒を製品化
Producing New Concept Sake from Industry-Academia Partnership Project with an alumnus

東洋大学は、様々な研究成果を実社会で生かすために、自然科学、社会科学、人文科学など幅広い分野の研究や、産官学連携を積極的に推進しています。工業技術研究所では、「東洋大学工業技術研究所産学連携プロジェクト」として理工学部生命工学研究室(峯岸宏明准教授)と本学卒業生が専務を務める有限会社佐藤酒造店が連携し、2019年より新しいコンセプトでの日本酒の研究・開発をスタート。醸造・試験醸造を経て川越キャンパスに自生するホトケノザの花酵母を使用した日本酒「越生梅林エスティ」を2023年2月に製品化しました。今後も、東洋大学の研究活動を産業界での活用へと結びつけるために取り組んでまいります。

Toyo University actively promotes researches and industry-government-academia partnership formation in a broad range of fields, including the natural sciences, social sciences, and humanities, seeking to create opportunities to apply its research achievements to real-life settings in society. In a recent example, Toyo University Research Institute of Industrial Technology launched Industry-Academia Partnership Project in 2019. In the project, a partnership was formed between the Biotechnology Laboratory (Assoc. Prof. Hiroaki Minegishi) in the Faculty of Science and Engineering and Sato Shuzo, a sake brewer who is a Toyo University graduate serving as senior managing director, in order to engage in research and development to create new concept sake products. The recent product was developed by using yeast isolated from the flower of Lamium amplexicaule, which is a native plant on the Kawagoe Campus, establishing the brewing process and performing trial brewing, and placed on the market under the name of Ogosebairin STY in February 2023. Going forward, Toyo University will continue with endeavors to apply the fruits of its research activities to industrial purposes.
